Home cured Karlsburger Korned Beef!

Ingredients & Instructions

For the Brine:
1 gallon water
2 cups Kosher salt
5 teaspoons pink curing salt
3 Tbsp Karlsburger pickling spice
1/2 cup brown sugar

In a large pot, add Karlsburger pickling spice salt and brown sugar to the water and bring to a boil. Remove from heat and cool to room temperature, then refrigerate until well chilled.

Brisket:
1 4-5 Lb. Brisket
1 Tbsp Karlsburger pickling spice


Place the brisket in a large flat pan and cover meat completely with brine. If the meat floats, weigh it down with a plate. Refrigerate for 5-7 days, flipping the brisket over each day.

Remove the brisket and rinse with cold water. Place it back into pot and cover with water. Add 1 tbsp. Karlsburger pickling spice and bring to a boil. Reduce heat and simmer for 3-4 hours until tender. Slice and serve with cabbage or make Reuben sandwiches!
